I searched high and low for a delicious, clean-eating oatmeal cookie. I read recipe after recipe but each one seemed to be missing a little something or contained ingredients I wanted to avoid. After looking at several recipes, I gave up. I pulled several ideas together and went with it. The results were delicious!
2 tablespoons peanut butter
Pinch of cinnamon to taste
1/2 cup quick oats
2 tablespoons ground flax seed
Slightly less than 1/4 cup dark chocolate chips, nuts, raisins, etc. (you choose!)
Preheat oven to 350 degrees. Grease cookie sheet (I use olive oil in a pump sprayer)
In a medium bowl, mash the banana. Add the peanut butter and mix until creamy. Some banana lumps are fine.
Mix in quick oats, ground flax seed and cinnamon.
Fold in your choice of add-ins.
Drop rounded heaping tablespoon balls on greased cookie sheet. Cookies will keep their shape, so flatten slightly with a spatula before baking.
Bake at 350 degrees for 13-15 minutes until firm. Yields 8 cookies.
